If you are worried about Cortana snooping on you, you can clear personal information from Cortana with a few simple clicks.
Cortana is easily the most welcome addition to Windows 10 which is a huge plus for productivity enthusiasts who know how to use her wisely to organize themselves.
However, if you are security conscious about what she is storing about you, you can clear her memory and other storage of your recent searches or history.
This guide will walk you through how to simply remove your local information and information stored on bing cloud to alleviate of your worries of Cortana Spying on you.
To start, press Windows Key + S and type in Settings.
Now, navigate to Privacy:
Now Navigate to Speech, inking, and typing and this is where you end your relationship with Cortana by clicking on “Stop getting to know me”
And with that, you have now cleared all the local data that Cortana has on you. Just do this every now and then to ensure that the data collected on you isn’t sent to Microsoft.
However, there are other ways for you to clear your account stored on Bing.com.
Navigate to the following link and sign in to the same email address that you use with Windows 10. Over here, you have to choose interests and when prompted to, clear your interests.
Next, scroll down the page and look for “Other Cortana Data and Personalized Speech, Inking and Typing” and choose to clear this too. 
Next, navigate to Search History, and access the Search History Page.
When you are prompted to, clear all the data and click the turn-off button.
And with that, you are now completely clear of Cortana and Bing from harvesting your data. Just make sure you do this ritual every once in a while depending on your usage of Cortana or other Microsoft services that monitor your data like Bing.
These steps are recommended if you wish to avoid receiving unsolicited emails from Microsoft partners should they ever sell your data to a third-party, but prevention is always better than the cure, right?
